Allergen-Free Recipe: "Love Me Do" Powdery Pecan Snowballs

Serves: 30 snowballs
  • 1 cup ground pecans (or cashews or almonds)
  • 1 cup Gluten-free Cookie Blend
  • ¾ tsp xanthum gum
  • 6T organic palm oil shortening
  • 2T vegan butter
  • 1 tsp vanilla
  • 2T organic sugar
  • ⅛ tsp sea salt
  • *********************
  • ¼ cup powdered sugar
  1. Whisk Gluten-free Cookie Blend and xanthum gum in a bowl.
  2. Add all other ingredients except for the powdered sugar.
  3. Knead the dough with your hands and combine thoroughly.
  4. Form small balls with the dough and put them on an ungreased cookie sheet.
  5. Bake at 275 degrees for 30 minutes.
  6. Allow to cool for 10-15 minutes.
  7. Measure the powdered sugar into a bowl. Roll the balls in the powdered sugar until covered.
  8. Serve and enjoy.
